As a seasoning mesquite often stands alone but it is nicely balanced with the brght, fresh flavors of Serrano peppers or orange zest.Soak wood chips prior to using them. This allows the chips to smolder and create smoke. Mesquite burns very hot- too hot for some foods-so it is best suited to quick-cooking cuts of meat.
