Calcium chloride is an inorganic compound, processed from limestone chips. Used as a food additive to improve the quality and stability of foods and as a source of extra calcium in food. It serves as a firming agent in canned fruits, vegetables and tofu; used as an additive to pickle brine.

It gives the salty taste without loading it with sodium; used to increase the water hardness in swimming pools, added to processed milk to restore the natural balance between calcium and protein in casein for the purposes of making cheeses.

It makes the curds larger and firmer in milk, and a single teaspoon of calcium chloride solution can treat 2 gallons of milk.

Precaution: Calcium chloride is an irritant; wear gloves and goggles to protect hands and eyes; avoid inhalation.
