Description
Benzoic acid is derived from Gum Benzoin, is a colorless crystalline solid.
Commonly used antimicrobial preservative in food and beverages, especially in carbonated beverages, and in a wide range of acidic products against fungi, fermentation, growth of mold, yeast and some bacteria.
They are not very effective in products with a pH above 5 (slightly acidic or neutral).
Typical levels of use for benzoic acid as a preservative in food are between 0.05–0.1%.
